Lourdas Lentil Soup (Fakés) - Serves 6
 

 
Enjoy this hearty bowl of lentil soup alone or with some fresh crusty bread and feta cheese. Serve soup hot and drizzled with vinegar.
 
1/2 pound lentils (rinsed)
2 quarts water
1 cup chopped onions
1/2 cup chopped celery
1/2 cup diced carrots
3 tablespoons tomato paste
1 bay leaf
salt and pepper
1 clove garlic
1/2 teaspoon dried oregano
2 tablespoons olive oil
 

In a medium pot add water and bring to a boil;reduce heat to medium. Add onions, celery ,lentils, bay leaf, tomato paste, oregano.Cook uncovered for 1 hour. Add carrots, garlic, olive oil, salt and pepper. Cook additional 15 minutes or until lentils are tender and soup has thickened. Taste and adjust seasonings.
